Homemade Cashew Nut Cheese or use Almonds. Easy to make–just nuts, water & probiotic powder. A great dairy-free cheese option that’s Paleo Diet compatible.
Homemade Cashew Nut Cheese or Almond
- 2/3C Raw Cashews, soaked overnight or use slivered Almonds
- 1/3C Filtered Water, more or less
- 1/4t Himalayan or Sea Salt
- 2t Fresh Squeezed Lemon Juice
- 1/4t Yogurt or Kefir Culture Starter or Probiotic Powder, from packets or capsules, *see note
- Equipment - cheese cloth
- Optional - fresh raspberries and mint leaves as garnish
DIRECTIONS - add cashews or almonds, water, and lemon juice to a small glass jar. Cover and refrigerate overnight to soften cashews so they will blend better. Remove jar from refrigerator. Transfer nut mix to a small food processor or inverted blender cup. Add salt, if using. Blend well. Adding more filtered water, if necessary. Blend until mixture is smooth and creamy. Mix in yogurt starter or probiotic powder. Transfer mixture to a clean jar. Cover with cheesecloth round large enough to cover mouth of jar. Secure with a rubber band. Let nut cream mixture sit on the counter for about 24 hours. Until nut cream cultures and thickens. Form cheese into small round. Wrap in cheesecloth. Place in small colander. Put a small weighted plate on top of the cheese round. Place over a bowl to catch the nut ‘whey’ or probiotic liquid that drips from the nut cheese. Press the cheese for several hours. Let cheese firm up to the consistency of firm cream cheese.To further firm up chees and shape it as pictured, poke holes in the bottom of a wax coated paper cup. Add pressed cheese to the cup. Place cup in a bowl to catch any liquid. Cover top of cheese with cheese cloth. Weight it down with a CAN? Place in the refrigerator. Cheese should continue to firm up to the point that it is soft but sliceable. Remove from paper cup. Turn upside down on small plate, if serving. Optional--garnish with fresh raspberries and mint leaves. Store cheese in a small, airtight container in refrigerator. To create a hard rind around cheese, place cheese in a dehydrator. And dehydrate for several hours. Cheese will remain soft on the inside.
*NOTE – the cultures in your probiotic powder will determine the taste of your cheese. Buy yogurt culture starter in the refrigerator section of your natural food store. Or buy a yogurt or kefir probiotic powder, in packets or capsules. If you currently take probiotic capsules which contain a powder, you can use those.
